FRESH AND EASY MANGO SALSA

Enjoy this fresh and easy mango salsa! Works great solo, on some tacos or even as a dip or salad! It’s packed with produce goodness and too easy not to make.

Ingredients:

•  3 fresh Catania ataulfo mangoes, peeled and cut into cubes

•  1 red pepper, cut into cubes

•  1/2 red onion, chopped

•  1/2 cup cilantro, chopped

•  Fresh Catania lime, squeezed

Directions:

1. In a serving bowl, combine the prepared mango, red pepper, onion, and cilantro. Drizzle with the juice of fresh lime.


2. Using a large spoon, stir the ingredients together. Season to taste with salt, and stir again.


* If you’re a fan of spice, add 1 Jalapeño pepper; seeds removed and finely chopped.
* If you are not a fan of cilantro, substitute with parsley.
* This recipe works great with all mango varieties!
